Egg White Omelet

Breakfast. In my personal opinion, it's incredibly important, not to mention delicious!  You will read this everywhere.  Breakfast is the most important meal of the day.  It is important to break the "fasting" that you have been putting your body through all night while sleeping.  This fasting puts your body into an elevated state of stress saying"hang on to all the calories we got because we may starve at some point in the future!"  This response was incredibly important evolutionarily.  When you think of our ancient ancestors, it wasn't absurd to think that they would go into long periods of starvation between hearty meals.  In a hunter/gatherer society, there is much less guarantee of a consistent meal.  In which case, our bodies developed a way to store calories for times of starvation as an emergency store... Body Fat!  The calories you can obtain from fat in your body are endless, even if you are sub 10% body fat.  In the 21st century, this storage response is not nearly as important because our meals are relatively consistent.  That being said, our bodies still posses this response and this is why people suggest eating 5 meals every day so you don't go more than a few hours without ingesting food.  This is a tangent, and I will talk more about this topic in the Science and Research area when I have a little more time.  The point of this post is Breakfast! My breakfast.

I love my egg white omelet every morning. High protein, mixed with a wide arrangement of veggies... It keeps me on track all day!

Almost everyday, my "main" breakfast is the exact same.  Boring, I know, but for some reason it hasn't gotten old for me yet.  When I say main breakfast, it is because I have actually already consumed calories in other forms.  Typically I wake up and have an icelandic yogurt before training.  After training, I will have my coffee and the Vega One all-in-one Shake that I described earlier.  Approximately 30mins to an hour after that, I have my "main" breakfast.

Ingredients:

2 strips turkey bacon

3 Egg whites

1/2 of a cup chopped green and red peppers

1/2 of a cup of baby spinach

1/4 of a cup chopped oninons

1/4 of a cup of diced mushrooms

1/4 of a cup of diced tomatoes

1/4 of a cup chopped ham (optional)

1 slice of pepper jack cheese

Hot Sauce

Preparation:

In a pan, I heat all the vegetables with a little bit of water to make them a little softer.  In a separate pan, I cook a thin egg white omelet.  After 2-3 mins of cooking the veggies, I move them to the center of the egg white omelet and place the cheese over top.  I fold over the egg white omelet to make a little "egg white burrito with veggies" and drizzle hot sauce over top.  Love this breakfast.
